My name is Karen Knoblaugh. I am a Registered Dietitian and I earned my Master’s Degree in Nutrition Science. I teach at a large university and also have my own business, Food Allergy Consultants, working with the foodservice industry, specifically restaurants, to help them develop menus based on healthy eating guidelines. I also provide nutritional analysis, allergen identification, and help chefs build gluten-free menus.

I believe that I have the best of both worlds, being able to educate people about healthier eating, and also being able to work within the foodservice industry to make healthier food more available for everyone.

I love what I do, and as I have always enjoyed writing, I thought, “Why not add in a third component and start writing about health and nutrition as well!” So, here it is. My attempt at creating something fun, informative, and even possibly life-changing. Comments are welcomed and appreciated. Thank you and I hope you enjoy.
